Caviar is a rare and expensive treat. Although some people don’t like the taste, they all agree that tasting caviar is a unique gourmand experience. However, few of them know how hard is to produce high quality caviar. Therefore, next time you taste some caviar with a glass of champagne, remember the following story.

The Lotschberg base tunnel provided an unexpected opportunity for local entrepreneurs to produce organic caviar. When the engineers came upon warm water, about 150 litres were used to create a hothouse heated with mountain water. The hothouse was ideal to cultivate tropical fruits and fish bred. The team decided to breed sturgeons, a sought-off fish for its meat and caviar. Few researchers from the University of Bern joined the team and over a couple of years, they made experiments in order to see if the Siberian sturgeon will adjust to this environment.
